Intake of protein, which is vital for human survival require changes following the importance of food security and demand of solving the problems in current livestock industry. As one of alternatives, alternative protein foods are rising, and various alternative protein foods have been introduced including plant-based meat. It has been expected that global food market is consistently growing and the food market of alternative protein will be also essential. In this dissertation, emerging factor of alternative protein by foods and growth factor for improvement will be investigated targeting general consumers and researchers in relevant fields. In addition, the measure for improvement in future alternative protein foods will be studied. Also, consumer acceptance enhancement method of alternative protein foods that newly emerged food will be investigated by comparing with genetically modified(GM) foods. In this dissertation, the contribution of alternative protein foods will be investigated by focusing the main factors that increase the sustainability of agriculture and lead development of Korean food industry.
인류의 생존에 반드시 필요한 단백질 섭취는 식량안보의 중요성 및 기존 축산업이 가진 문제 해결 요구에 따라 변화를 요구하고 있다. 그 대안으로써 대체단백질 식품이 떠오르고 있으며, 식물성 고기를 포함해 다양한 대체단백질 식품이 등장하고 있다. 전 세계 식품산업 시장은 지속적으로 성장 할 것으로 예상되고 있으며, 식품시장 성장에 따라 대체단백질 식품 시장의 성장 또한 필수적일 것으로 예측되고 있다. 본 학위논문에서는 대체단백질 식품별 등장요인과 발전을 위한 성장요인을 일반 소비자와 관련 분야 연구 개발자를 대상으로 조사·분석하여 미래 대체단백질 식품 산업의 발전을 위한 방안에 대해 고찰하고자 한다. 또한, 새로운 식품인 대체단백질 식품에 대한 소비자 수용도를 유전자변형 식품과 비교하여 소비자 수용도 제고 방안을 도출하고자 한다. 이를 통해 농업의 지속가능성을 높이고, 한국 식품산업의 성장을 견인할 수 있는 주요 요인으로 대체단백질 식품이 기여할 수 있는 방향에 대해 조망해보고자 한다.
