To preserve milk temporarily, hydrogen peroxide was added at the concentration ranging from 0.01% to 0.05% and kept at 30℃, 20℃ for 16 hours with periodical determinations for viable counts, residual hydrogen peroxide and lactic acid. Under the tested conditions, the initial level of contaminated bacteria could be arrested from growing for at least 8, 12 and 16 hours by treating the milk with 0.01, 0.02, and 0.03% hydrogen peroxide, respectively.
Furthermore, when the hydrogen peroxide concentrations were limited within the level of 0.03%, the added hydrogen peroxide was completely decomposed within 12 hours without the aid of catalase and decomposition time decreased in parallel with the hydrogen peroxide concentrations.
The germicidal effect of hydrogen peroxide was varied with initial microbial contamination level, temperature, hydrogen peroxide concentration, the duration of time and the kind of microorganisms.
우유를 산패로 부터 방지하기 위해 과산화수소를 이용한 보존법에 관해 조사하였다. 착유직후의 우유의 경우 30℃에서 0.03% 이하의 과산화수소 농도에서 인위적으로 catalase 를 첨가없이 16시간 이내에 분해가 되었다. ml 당 $1 × 10^5$의 오염정도에서는 30℃에서 8시간 동안 보존하기 위해서는 0.02%의 과산화수소 농도로써 충분하였고, 20℃에서는 12시간 동안 가능하였다.
과산화수소의 분해가 완료되는 동시에 우유속의 오염균의 생장이 시작되었으며 이는 과산화수소의 농도가 낮을수록 균의 오염상태가 높을수록, 온도가 높을수록 촉진되었다. 과산화수소의 첨가로써 산생성은 충분히 억제할 수 있었으며 과산화수소의 살균작용은 미생물의 종류마다 다르게 나타났다.
Hydrogen peroxide-catalase 처리로써 과산화수소를 완전 분해 시켰을 경우 유산균의 생장과 활성에 별다른 차이가 없었으나, 과산화수소가 잔존했을 경우에는 유산균의 활성에 큰 영향을 미쳤다.
