Biomaterials have recently been highlighted as functional materials due to the identification of molecular structural features and the development of extraction and purification technologies. In addition, rod-shaped biopolymers/colloids develop a liquid crystal phase in a condensed state and the formation of nano- or microstructures can be controlled even by macroscopic forces due to their self-assembly properties. However, so far, there have been few research cases in which the self-assembly of biomaterials has been considered in the manufacturing process. In this thesis, novel nano-/microstructures that form through self-assembly are introduced when the biomaterials are deposited by the drying process. Also covered are the results of inducing and controlling structure formation through the solution process. In addition, there are some examples of how the structural characteristics can work in concert with the molecular functionalities of biomaterials.
