High internal phase emulsions, which their volume fraction of dispersed phase is over 74%, shows solid like property because of their tremendous interfacial area. Many researches claimed models to explain the rheological properties of HIPEs, however, most of them are for the surfactant emulsions. In the case of Pickering HIPEs, higher G’ values were obtained compared to surfactant HIPEs at identical volume fraction but there is no clear explanation for this yet. In this study, we figured out how colloidal particles attributed to the change of emulsion rheology in terms of interface and bulk respectively. By measuring the rheological properties of interfacial particle layer and continuous phase which is colloidal suspension, we could validate that colloidal suspension in confined geometry between two droplets brought larger G’ of Pickering HIPEs. By reducing gap of parallel plates of rheometer, we could observe the effect of confinement on rheological properties of colloidal suspensions and figured out that liquid to solid transition can occur without changing volume fraction or temperature. In addition, respective theoretical model for interfacial rheology and confined continuous phase supported the experimental results.
내부상 비율이 74% 이상인 고내부상 에멀전은 매우 넓은 계면적으로 인하여 고체와 같은 성질을 보인다. 많은 연구들이 이러한 고내부상 에멀전의 유변특성에 대한 모델링을 시도하였지만 대부분이 계면활성제로 안정화된 에멀전에 국한되어 있다. 콜로이드 입자로 안정화되는 피커링 에멀전의 경우 계면활성제로 안정화된 에멀전보다 더 큰 탄성력을 가지는 것이 확인되었지만 이에 대한 충분한 설명은 아직 없다. 따라서 본 연구에서는 입자가 안정제로 사용됨에 따라서 가져올 수 있는 영향들에 대해 계면과 벌크의 관점에서 분석을 하였다. 계면유변 특성과 연속상의 유변을 각각 측정함에 따라서 에멀전의 두 방울 사이에 있는 얇은 연속상에 있는 입자 현탁액의 물성이 에멀전의 높은 탄성을 결정하였음을 확인하였다. 평행 판 레오미터의 간격을 바꿈으로써 입자 현탁액의 감금효과에 의한 유변특성 변화를 관찰할 수 있었으며, 좁은 간격에서 입자의 부피비를 바꾸거나 온도 변화 없이도 액체에서 고체로의 전환이 일어날 수 있음을 확인하였다. 또한 각각 계면과 현탁액 감금효과를 이론적으로 계산하는 모델링 하여 실제 실험결과를 뒷받침할 수 있음을 보였다.
